Nooroongji (누룽지), a traditional Korean rice snack, is a nostalgic treat not just for those who grew up on it. The caramelized layer of crunchy rice that forms on the bottom of a pan of cooked rice, it's reminiscent of burnt marshmallows, rice pudding, caramel popcorn or even a sugar cone. We create this flavor by slowly toasting premium Korean rice and steeping it like a tea into our base of grass fed dairy until the perfect point.
In Korean culture, black sesame seeds (흑임자) are known for its nutritious properties. Being a good source of fiber, calcium, zinc and magnesium, Koreans often eat foods with black sesame seeds to regain strength during a recovery and to help daily blood circulation.
For this Asian classic we use whole organic black sesame seeds that are roasted prior to being ground. Nutty, bitter with slight undertones of chocolate, our black sesame seeds are ground to a paste and blended fully into our sweet cream. We then fold in whole seeds with a touch of pure vanilla bean for balance and to bring out the unique complexity of this beloved flavor.
Bae-Sujeonggwa (배-수정과), a traditional Korean sweet punch, is one of our all time favorite dessert drinks. Made with cinnamon, ginger, peppercorn and pear, we create this flavor by folding an anjou pear sauce into our sweet, warm, slightly peppery cinnamon-ginger ice cream. Our anjou pear sauce is made-in house and creates a beautifully balanced flavor of brightness and warmth.
Golden sesame (볶은깨), a staple ingredient in Korean cuisine, is one of our most beloved flavors of home. In ice cream form it's the perfect balance of savory and sweet. Sesame is truly one of those special ingredients that makes Korean food distinctly Korean, and adds brightness, texture, and depth to any dish.
Turmeric Ice Cream + Korean style Honeycomb
Ppopgi (뽑기) , a popular throwback Korean style honeycomb, is a crunchy, chewy, caramel confectionery. We make ours in-house, break it into pieces and fold those pieces into our delicious turmeric ice cream. The honeycomb remains crispy on the inside and creates ribbons of caramel throughout the ice cream. A popular Korean throwback reimagined into a new American favorite.
Korean Perilla Mint Sorbet (Dairy-free, Vegan)
Korean perilla leaves (깻잎), a member of the mint family, are large and flat with serrated edges and a beautiful purple hue on the underbelly. They are aromatic and herbaceous in flavor with nuances of mint, basil, anise, and licorice. Often marinated with Korean spices or used for ssam, we decided to put a sweeter spin on it by crystallizing the leaves, pureeing them and churning a dairy-free vegan sorbet for a refreshing unique flavor.
