It has long been considered the “poor people’s drink” but has recently regained popularity. Made from nothing more than fermented rice, yeast, and water, makgeolli typically contains 6 to 8 percent alcohol and is a beautiful cloud of sweet milky deliciousness. Slightly fizzy from the fermentation process, its flavor profile consists of layered grain flavors that are heart-warming. Our Makgeolli Blues ice cream is made in collaboration with Hana Makgeolli, a fellow Korean-American woman-owned business that we love. A little boozy and reminiscent of white rabbit candy, a nostalgic Chinese creamy white milk candy. It’s a special treat, for sure. What makes this flavor blue in color? While stuck at home during the pandemic, we began feeling blue and missed being outside with friends under blue skies. we’re missing outdoor activities even more. We thought it would be nice to make a new flavor that reminded us of blue skies and carefree days, so we blended a little pinch of blue butterfly pea flower to our makgeolli ice cream. What is blue butterfly pea flower? It involves only 4 ingredients (2 tbsp instant coffee, 2 tbsp hot water and 2 tbsp sugar) whisked together. Once frothy and creamy, your mixture is then added to your choice of cold or hot milk. Fun fact: dalgona (달고나) is another name for Ppopgi (뽑기), an old fashioned Korean honey candy. We’ve been making our own since the start for our Turmeric Honeycomb flavor. We also save the honeycomb dust and crumbles that remain after chopping all of it. In the past, we’ve used it for personal baking projects (such as making caramel sauce and dusting over cakes and ice cream). Now we’re using it for our newest noona flavor: Dalgona Coffee ice cream! In the summer of 2016, I launched Noona’s at Hester St Fair on the LES (Lower East Side of Manhattan) on the day of the annual ice cream contest, and won best ice cream flavor for our Toasted Rice ice cream. It’s 2023 and our Toasted Rice ice cream is still a top seller along with an entire line of Asian American flavors and dairy-free options. The bottom line is our neighborhood grocery stores need to be better and do better with bigger and more inclusive ice cream selections! At Noona’s, we’re committed to making all our sweet treats in a way that creates a space for people of color and reforms our food culture. The unique story of where an ingredient or flavor comes from is compelling and should be honored. All our recipes are connected to an emotion and memory that hold significance and inspires me so much that I can taste it, envision it in ice cream form. If I can’t taste it in my mind before I make it, it will never be a Noona’s flavor. At the same time, some of our flavors are based on Asian classics and as simple as wanting to honor those tried and true traditions. I love my grandma (the OG noona), what more is there to say. Noona means big sister in the Korean language. My first happiest memory was becoming a big sister, and my second happiest memory was discovering ice cream. Hence, Noona’s Ice Cream. <3 For me, a good noona feeds you good food. And at Noona’s, I hope to always feed people damn good ice cream. As a pastry chef and creative fascinated with ice cream, I experience most things with heightened sense. I can taste my feelings, and I find joy in making flavors out of the most memorable moments in life… perhaps to recapture them over and over again. I’m sure a perfumer approaches scent in a similar manner. :) But how Noona’s actually came into existence started in 2014. I found myself at a crossroads, trying to figure out my professional love and career path. I was working in operations for a small family-owned company and found myself immersed among entrepreneurial spirits. On my spare time, I’d make ice cream and share it with neighbors and friends. The small gesture of sharing ice cream created significant moments in time, sparking joy and indelible connections that continue to inspire me to this day. Fast forward 8 years and I’m proud to have Noona’s be recognized as making some of the best ice cream around and the go-to choice when seeking Asian-inspired ice cream flavors. Recently, in Dec 2024, I opened Noona’s Ice Cream & Bakeshop, my first brick & mortar shop to merge my love of baking with my love and expertise of ice cream. As a native New Yorker with a fondness for the East Village, opening a little shop on E 5th Street is special. Expect a greater assortment of Asian-American flavors and some of that NYC flair as well. Imagine ice cream flavors like Banana Pudding Mochi and Fiery Snickerdoodle Cookie Dough (made with gochujang - Korean chili) and baked sweets like our signature Sesame Black & White Cookie.
