This one’s going to the best Fall flavor to ever exist, hands down. What we personally love about persimmons is how plump and cute they are. They look so full and rich like baby cheeks. Reminds us of new beginnings. A time to celebrate living to the fullest and honoring the past.
Noona’s Persimmon Jubilee ice cream is our (Michelle and Hannah noona’s) grand gesture of celebration to you all.
If you’re not as familiar with persimmons, we’re here to fill you in! There are a few types of persimmon but they’re all a vibrant orange-colored gem of a fruit with bittersweet notes. They are mildly sweet and get sweeter and sweeter as they ripen. When it comes to flavor, think honey, walnuts, apricot with subtle bitter caramel notes. It’s a fruit with quite a bit of complexity and is often enjoyed when ripened or dried and candied.
After talking with Michelle about our favorite type of ice cream and favorite way of enjoying persimmons, we both jumped at the idea of creating a classic Sujeonggwa-flavored ice cream with dried persimmons. Sujeonggwa is a chilled Korean sweet punch made with dried persimmons soaked in a tea base of fresh ginger root and cinnamon sticks and finished with a sweetener like honey.
What you’re going to find in Noona’s Persimmon Jubilee ice cream is a beautiful orange persimmon-colored ice cream with a ginger cinnamon taste with little candied persimmon gems speckled throughout. The ginger brings brightness and a little zang and tang to the flavor and the cinnamon grounds the ginger flavor with its warmth. We candy the persimmons with cane sugar and honey, then chop them up into tiny little gems you’ll find speckled throughout the ice cream.
Okay, how UNBELIEVABLY DELICIOUS does that sound?
